Paleo Plum Blackberry Crumble

Today I am sharing with you a summer fruit crumble that I made for my dad's birthday.  Plums and blackberries are very easy to find at this time of year, and seem to be at their peek of freshness.  If you are lucky, you may even be able to purchase local plums, which are 10x better than store bought varieties for certain!  By itself, the crumble is quite satisfying, yet is also delicious with a side of vanilla or strawberry ice cream.  Yes, I am aware that the dish below is an aluminum throw-away baking dish.  However, when you are last minute baking at a beach cottage, Ocean State Job Lot becomes your best friend.  In the end, how something looks does not always foretell how it tastes. Therefore, despite this unprofessional look, everyone said it tasted great!  I hope you enjoy it as much as my family did!






Plum Blackberry Crumble
Ingredients
  • 8 inch baking pan
  • 5 purple plums 
  • 12 oz fresh blackberries
  • 1 tsp cinnamon
  • 1 tbsp vanilla extract
  • 1/4 tsp salt
  • 1/4 cup tapioca starch 
  • 1/2 cup almond flour
  • 1 cup slivered almonds or pecans
  • 4-6 tbsp coconut oil or butter
  • 1/2 cup + 2 tbsp coconut sugar
Process
  • Preheat oven to 350 degrees
  • Slice plums into 1/2 inch crescents and cut blackberries in half. 
  • In a medium bowl combine plums, blackberries, and vanilla.
  • Using a separate bowl, whisk together tapioca, sugar, cinnamon, and salt.
  • Sprinkle dry mixture over fruit and mix with hands until it is fully coated.
  • Transfer mixture into a greased 8 inch baking pan.
  • In a food processor, pulse pecans 2-3 times. 
  • Add almond flour and remaining 1/4 cup sugar to processor and pulse until combined.
  • Cut in coconut oil until mixture is sticky and has become dough-like.
  • Crumble topping mixture over fruit.
  • Place in oven and bake for 45 minutes until oozing. *If you feel your crumble is not cooked down enough, bake for another 15 minutes. 
  • Let cool for half a hour before serving.
